Noce de Craie Grand Cru 2019 is a 100% Pinot Noir from Aÿ with an Extra Brut four gram per liter dosage. Rapt with aromatic tension, the nose reveals oxidative toasty notes alongside fresh Mirabelle plum, spiced apple compote, and raw almonds then leads to a medium to full-bodied palate full of crushed cherries and poached pear bathed in stimulating acidity. Salinity and a twist of lemon peel define the finish and leave you thirsty for more. Disgorged March 2021 with a four gram per liter dosage.

Champagne

Champagne, exclusively from France's Champagne region, is synonymous with luxury and celebration. Made primarily from Chardonnay, Pinot Noir, and Pinot Meunier, it undergoes secondary fermentation in the bottle, creating its signature bubbles. Flavours range from crisp green apple and citrus to rich, toasty notes of nuts and honey. Yeast contact in the bottle contributes to pastry and brioche notes, which are a key part of good quality Champagne. Top producers include Moët & Chandon, Veuve Clicquot, and Krug.
